Cinnamon Crunch Granola Fudge Brownies

Ingredients
- ¼ cup Eat Purposefully Cinnamon Crunch Granola ( the crumbs work great)
- ¼ cup raw cacao powder
- ¼ teaspoon sea salt
- ¼ cup dark chocolate chips
- 2 Tablespoons coconut oil, melted (plus extra for greasing the pan)
- 1/3 cup coconut sugar
- ¾ cup plain full-fat Greek yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat & Prep: Preheat your oven to 350°F. Grease a 6×6” baking pan with coconut oil and set aside.
- Mix Dry Ingredients: In a small bowl, combine the finely ground Cinnamon Crunch Granola, cacao powder, and sea salt. Set aside.
- Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips and coconut oil. Stir until completely smooth.
- Combine Wet Ingredients: Stir the coconut sugar, Greek yogurt, and vanilla extract into the melted chocolate mixture.
- Add the Eggs: Mix in the eggs one at a time, ensuring the batter is smooth and glossy.
- Incorporate Dry Ingredients: Gradually fold the dry ingredient mixture into the wet ingredients, mixing until just combined.
- Add Extra Crunch: Gently fold in a handful of Cinnamon Crunch Granola for an added surprise of texture in every bite!
- Bake: Pour the batter into the prepared pan and spread evenly. Bake for 20–25 minutes, depending on how gooey you like your brownies (20 minutes for gooier, 25 for firmer).
