Healthy cookies weren't always my thing...

I remember the first time I tried to make cookies “healthier.” I swapped out a few ingredients and hoped for the best. Let’s just say, the results weren’t exactly delightful. But I kept experimenting because I believed I could create a cookie that was both comforting and gut-loving. Fast-forward a few years (and countless test batches!), and I’ve finally nailed a recipe that feels just right. These cookies are soft, lightly sweet, and filled with gut healthy nourishment that help support a happy digestive system.

Why These Cookies Are Great for Your Gut

  1. Oats – Oats provide beta-glucan, a type of soluble fiber that can help maintain healthy gut bacteria (1).
  2. Banana – Bananas are well-known for their resistant starch, which acts as a prebiotic to help feed the good guys in your digestive tract (2).
  3. Coconut Flakes – Coconut is rich in fiber and contains fats that are easier for many people to digest.
  4. Eat Purposefully Granola – Our granola is crafted with fermented oats and soaked chickpeas, offering multiple sources of prebiotic fibers and making it extra gentle on your tummy. The best part is you'll love every ingredient we use.
  5. Cinnamon and Vanilla – Besides adding cozy warmth, cinnamon has been studied for its anti-inflammatory potential (3), and real vanilla just brings everything together.

The Recipe (Makes About 9 Cookies)

  • ¾ cup oats
  • ¾ cup banana, mashed (about 1½ medium bananas)
  • 1½ eggs, lightly beaten
  • 1/4 cup coconut flakes
  • ¾ cup Eat Purposefully Granola ( Use Original Cinnamon or Balanced Blueberry) 
  • 1½ teaspoons cinnamon
  • 1½ teaspoons vanilla extract
  • 1 tbsp maple syrup
  • 1 or 2 tbsp chocolate chips

Directions

  1. Preheat your oven to 300°F (150°C).
  2. Combine all ingredients in a large mixing bowl. Stir until you get a thick, cookie-dough texture.
  3. Scoop the dough into round cookies on a parchment-lined baking sheet.
  4. Bake for about 12 minutes, or until the edges look lightly golden.
  5. Cool for a few minutes (if you can wait!) and enjoy.
