This is a gut-nourishing twist on a classic banana bread recipe, made with simple, intentional ingredients.

  • 3 overripe bananas (1⅓ cup mashed)
  • 2 eggs
  • ⅓ cup pure maple syrup
  • ½ cup plain Greek yogurt (or dairy-free alt)
  • 1 tsp vanilla extract
  • 1 cup organic all-purpose flour
  • ¼ cup Eat Purposefully Original Fermented Cashew Granola
  • ¼ cup organic plain pea protein
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • ¼ tsp salt
  • 2 tbsp melted coconut oil
  • ¼ cup chopped walnuts (optional)
  • 2 tbsp cacao nibs (optional)

Instructions

Step 1: Preheat oven to 350°F. Line an 8.5x4.5 inch loaf pan with parchment paper and lightly grease.

Step 2: In a large bowl, mash bananas. Add eggs, maple syrup, coconut oil, yogurt, and vanilla extract. Whisk until smooth.

Step 3: In a separate bowl, mix flour, granola, pea protein, baking soda, cinnamon, and salt.

Step 4: Fold dry ingredients into wet until just combined. Don’t overmix.

Step 5: Pour batter into pan. Sprinkle 2 tbsp of Eat Purposefully granola, walnuts and cacao nibs on top for added crunch.

Step 6: Bake for 50–60 minutes or until a tester comes out clean. Let cool before slicing.
