This recipe started with my dad.

He is not exactly the person who wakes up thinking about chia seeds, fiber, or how many purposeful ingredients he can fit into breakfast. If something feels too healthy, too complicated, or too far from the food he already likes, he is probably not interested.

But fiber matters. A widely cited estimate from the 2020-2025 Dietary Guidelines for Americans found that 97% of men were not meeting the recommended intake for dietary fiber. So, in my ongoing effort to sneak a little more fiber into my dad's day, I kept adjusting his overnight oats until I found the version he actually looked forward to eating.

This is that recipe.

Whenever I visit him, these Bananas Foster overnight oats are a staple breakfast. They take me all of five minutes to put together, but they taste creamy, cinnamon-y, lightly sweet, and a little more special than the effort suggests.

The banana, vanilla, maple syrup, and cinnamon give the oats that warm Bananas Foster-inspired flavor. Chia seeds and gluten-free oats bring the texture, while the crumbs from Original Cinnamon Granola add cinnamon-cashew flavor and make sure the bottom of the bag gets the ending it deserves.

Ingredients

  • 1/3 cup gluten-free organic oats
  • 1/3 cup cinnamon-cashew granola crumbs, preferably Eat Purposefully Original Cinnamon Granola
  • 2 tablespoons chia seeds
  • 1/3 cup water
  • 1/3 cup milk of choice
  • 1/3 ripe banana
  • 2 teaspoons maple syrup
  • 1 teaspoon vanilla extract
  • 5 dashes cinnamon, or about 1/4 teaspoon
  • 1/8 teaspoon fine sea salt, or a small pinch
  • Extra granola and sliced banana for topping

How To Make Bananas Foster Overnight Oats

1. Mash the banana

Add 1/3 of a ripe banana to a jar with a secure lid.

Mash it well with a fork. A spotty, ripe banana works best because it adds more sweetness and blends easily into the oats.

2. Add everything to the jar

Add the gluten-free oats, granola crumbs, chia seeds, water, milk, maple syrup, vanilla, cinnamon, and salt.

3. Shake it up

Secure the lid tightly and shake until everything is thoroughly combined.

Open the jar and scrape down any chia seeds or oats that may be clinging to the sides. Give it one more quick stir or shake so everything has a chance to absorb the liquid evenly.

4. Let it chill

Refrigerate for at least 30 minutes.

This gives the chia seeds, oats, and granola crumbs time to absorb the liquid and create a creamy, spoonable texture.

For an even thicker breakfast, let the oats chill overnight.

5. Top and enjoy

When you are ready to eat, give the oats a good stir.

If they are thicker than you like, add a small splash of milk. Finish with more Original Cinnamon Granola, sliced banana, an extra dash of cinnamon, or a little maple syrup.

The Quick Method

Want to eat them right away?

Add the chia seeds and water to your jar first. Stir and let the mixture sit for 5 to 10 minutes, until the chia seeds begin absorbing the water and forming a gel.

Then add the banana, milk, oats, granola crumbs, maple syrup, vanilla, cinnamon, and salt. Shake everything together and eat immediately.

The oats will be a little chewier than the chilled version, but you still get that creamy banana-cinnamon flavor without waiting 30 minutes.

Kenz's Notes

Use a ripe banana. The banana is doing real work here: sweetness, flavor, and creaminess all come from that small third of a banana.

Save the best crumbs. The cinnamon-cashew crumbs at the bottom of the bag blend right into the oats, where they add texture and flavor without needing to be big clusters.

Adjust the texture after chilling. Chia seeds continue absorbing liquid, so add another splash of milk if you prefer looser overnight oats.

Start with a pinch of salt. Salt wakes up the banana, vanilla, maple, and cinnamon, but a little goes a long way in one jar.

Make It Your Own

For more banana flavor, add a few fresh slices on top.

For a warmer Bananas Foster feeling, add another dash of cinnamon and a tiny drizzle of maple syrup before serving.

For extra crunch, do not stir in all the granola. Save a spoonful for the top.

For a creamier jar, use a richer milk or add a spoonful of Greek yogurt.

Storage

Store the oats covered in the refrigerator and enjoy within 2 days for the best banana flavor and texture.

If the oats thicken in the refrigerator, stir in a splash of milk before eating.

Why I Keep Making These For My Dad

I could tell my dad that oats and chia seeds are sources of fiber. I could explain why fiber matters or show him the statistics.

But the better argument is handing him a breakfast that tastes good.

That is what finally made this recipe stick. It does not feel like a fiber assignment. It feels like creamy banana overnight oats with maple, cinnamon, vanilla, and plenty of crunch on top.

And when I visit, I can make it for him in five minutes, put it in the fridge, and know breakfast is already handled.

Sometimes eating more purposefully is not about completely changing what someone loves. It is about adjusting, tasting, and finding the version they are genuinely happy to eat again.
