Because we all know the crumbs are coming...

They settle at the bottom of the bag. They wait there while all the big clusters get picked out first. And then, when you finally reach them, you either begrudgingly sprinkle them over a yogurt bowl or pretend you are not going to throw them away.

But the crumbs are golden.

They are full of flavor, texture, and all the good little bits that make granola so satisfying in the first place. These muffins are the exact reason I love them so much. They are simple, soft, lightly sweet, and not crumby in the dry, sad way. They are moist, fun, and the kind of recipe that makes you feel very pleased with yourself for using every last bit of the bag.

So here we go: our Everything But The Crumb Muffins.

Ingredients

Wet Ingredients

  • 1 ripe banana
  • 1/3 cup Greek yogurt
  • 1/4 cup milk
  • 1 egg
  • 1/2 teaspoon vanilla extract

Dry Ingredients

  • 2/3 cup gluten-free oats
  • 1/3 cup granola crumbs
  • 1/3 cup coconut sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon

How To Make Granola Crumb Muffins

1. Preheat the oven

Preheat your oven to 350 degrees.

Line a muffin tin with paper liners or lightly grease the muffin cups.

2. Mash the banana

Add the banana to a mixing bowl and mash it well with a fork. The riper the banana, the better. A spotty banana will add more natural sweetness and moisture.

3. Mix the wet ingredients

Add the Greek yogurt, milk, egg, and vanilla to the mashed banana.

Stir until everything is smooth and fully combined.

4. Make the oat and granola flour

Add the gluten-free oats and granola crumbs to a blender.

Blend until they reach a flour-like consistency. It does not need to be perfectly powdery, but the texture should be fine enough to mix into the batter.

5. Mix the dry ingredients

In a separate bowl, combine the blended oat-granola flour, coconut sugar, baking powder, and cinnamon.

Stir until evenly mixed.

6. Combine wet and dry

Pour the wet ingredients into the dry ingredients.

Mix until thoroughly combined. The batter should look thick, soft, and scoopable.

7. Bake

Divide the batter evenly among the muffin cups.

Bake at 350 degrees for 20 minutes, or until the tops are set and a toothpick inserted into the center comes out clean.

Let the muffins cool in the pan for a few minutes, then transfer them to a cooling rack.

Kenz's Notes

These muffins are best when your banana is ripe. If your banana is still firm and pale, the muffins will be less sweet and a little less moist.

Any Eat Purposefully granola crumbs will work here, but Original Cinnamon is the easiest place to start because it naturally loves banana, cinnamon, and yogurt.

If your granola crumbs are chunky, blend them with the oats before mixing. This helps the muffins bake up soft instead of gritty.

How To Serve Them

Eat them warm with a little butter, nut butter, or yogurt.

Or keep them simple and snack on them as they are. They are especially good with coffee or tea, and they make the bottom of the granola bag feel like a prize instead of a problem.

Storage

Store the muffins in an airtight container at room temperature for 1 to 2 days, or refrigerate for up to 5 days.

You can also freeze them. Let the muffins cool completely, then freeze in a sealed bag or container. Warm one up whenever you need a quick snack.
